The left bank Chateau is a 2ème Grand Cru Classé of Pauillac. It has a unique position in the southern part of the Pauillac Appellation in Bordeaux, on the border to St Julien, tucked in between Comtesse de Lalande and Latour.
The current owner AXA has invested sufficient funds in reviving the Chateau to its former glory with first Jean-Michel Cazes in charge and now Christian Seely.
Could not imagine a better match than deer for the grand Bordeaux. The porcelain is made by the Danish manufacturer Royal Copenhagen and called “Blue Flower”.
The dark tainted cork reveals the intensity of the Pauillacs. A classic example of a Baron and one of the top Pauillacs of its vintage. 60% Cabernet, 30% Merlot and 5% Cabernet Franc.
An elegant and extremely rewarding wine. Really starting to show its complex layers. Sampled the same vintage 3 years ago and must admit it was a quite different experience back then.
The grilled loin of venison is here laid on a mixture of salads and mushrooms (porcinis and shitake), served with an intense dark glace.
Champagne is a must finishing off such a meal. Although usually not too keen on the NV Möets; I found their newly released non-vintage very convincing!
Here with “small” chocolate soufflés of dark Valrhona and a rich vanilla ice cream.
